Star anise and anise do not belong to the same family. Star anise is a fruit from a tree similar to the magnolia. In addition to the characteristic anise flavour, the aroma of star anise is distinguished by its citrus-like components, such as mandarin. There is also a light note of menthol. The whole fruits of star anise were carefully dried, together with the seeds. The essential oil, delicate and strongly aromatic, can primarily be found in the outer husk of the fruit. In the seeds, however, it is less concentrated.
– Star anise is ideal for hot dishes. It is a spice that requires heat and liquid in order to optimally develop its intense aroma.
– Because of its intense flavour, it is sufficient to use a dab on the tip of a knife. Whole seedheads can be removed before serving.
– It is recommended to add it to the dish 10 to 15 minutes before it is finished. It can be used in meat and game marinades, in which case we add it to marinade and let it rest overnight.
– It can be used with: Star anise goes perfectly with tomato as well! Try seasoning tomato sauce, ragù bolognese or tomato soup with it.
Star anise originates from south China. Although it is a relatively new spice, in our area it has quickly acquired the status of the necessity in the kitchen. Star anise is a spice with a very intense aroma. It must therefore be used sparingly. Even in a small amount, we will feel its intense, intoxicating aroma.
Star anise goes well with chilli, coriander, curry, fennel, honey, ginger, nutmeg, orange peel, pepper, vanilla, cinnamon, lemon zest.
