Cajun spice mix

Taste and flavour

The warm and sunny flavour of the cajun spice mix invokes memories of summer days, the scent of flowers and intoxicating flavour. In the southern parts of the United States, spicy and slightly sweet food is a feature. Fruit, seafood and the aroma of brown sugar and hot peppers blend perfectly in the kitchen, which gives a recognisable and unique flavour. This flavour is perfectly transmitted by the cajun spice mix with its fine spiciness and mild note of caramel.
The caramelised sweetness of sugar goes perfectly with the profound spiciness of hot peppers and strong aromas of turmeric, cumin, coriander, fenugreek, parsley, garlic, fennel, ground red pepper, ginger, cardamom and cinnamon.

Advice for use

– For the light preparation of marinades and sauces: mix the cajun spice mix with little liquid (soup, cream, oil or according to your own taste). Then add the oil and other ingredients of the sauce (fresh cheese, ricotta or crème fraîche). This prevents the formation of lumps and the mixture remains smooth.
– For soups, rice dishes and pepper stew: mix the cajun spices with a little warm liquid and add to the dish. For the optimum aroma, it should not boil, only simmer. This is the right moment to add the mixture: 5-10 minutes before the end of cooking.
– As a flavour enhancer: sprinkle a little bit of cajun spice mix over French fries or grilled dishes.
– Cajun spice mix goes well with pineapple, hot peppers, ginger, garlic, fresh coriander, caraway, mango, Thai basil, lemongrass, lemon zest, onion.
